Kerala style Kozhi (chicken) fry

Ingredients

1.Chicken thighs 6   skin less, washed and make superficial cris- cross cuts on the flesh to get the marinade in.

2.oil for cooking

3.marinade

  1. 1 inch ginger finely crushed
  2.  four cloves of garlic finely crushed
  3. 1 table spoon vinegar to use and crush the ginger and garlic
  4. salt & pepper to taste
  5. turmeric powder 1tsp
  6. chjil powder 1/2 to 1 tsp (depending on the heat you want)
  7. jeera powder 1/2 tsp
  8. oil 1 table spoon
  9. garam masala/meat masala  1/2 tsp

Process

steps

  1. Mix all the ingredients of the marinade and rub it in to the chicken pieces.
  2. heat a thick bottomed skillet and add oil
  3. ON high heat fry/sear  the chicken pieces 2 min each side
  4. Lower the flame and cover to cook for another 5-10 min or the chicken is cooked. You might have to add a little water/oil
  5. you can do the step 4 in an oven at 400 temp
