Kerala style Kozhi (chicken) fry
Ingredients
1.Chicken thighs 6 skin less, washed and make superficial cris- cross cuts on the flesh to get the marinade in.
2.oil for cooking
3.marinade
- 1 inch ginger finely crushed
- four cloves of garlic finely crushed
- 1 table spoon vinegar to use and crush the ginger and garlic
- salt & pepper to taste
- turmeric powder 1tsp
- chjil powder 1/2 to 1 tsp (depending on the heat you want)
- jeera powder 1/2 tsp
- oil 1 table spoon
- garam masala/meat masala 1/2 tsp
Process
steps
- Mix all the ingredients of the marinade and rub it in to the chicken pieces.
- heat a thick bottomed skillet and add oil
- ON high heat fry/sear the chicken pieces 2 min each side
- Lower the flame and cover to cook for another 5-10 min or the chicken is cooked. You might have to add a little water/oil
- you can do the step 4 in an oven at 400 temp
